Haha! So when planning this recipe, we had high expectations… it had to repeat the creamy, hearty and delicious chowder we used to bask.
We brainstormed back and ordinal connected the recipe we would develop and bingo! I thought of adding oyster mushrooms every bit the "clams". Huitre mushrooms have a meaty like texture. Fresh oyster mushrooms can be found in close to supermarkets and frequently times at farmer's markets during this season. They're slightly sweet tasting but variable, because of the elusive flavour. To me, they have a clam equivalent texture which is wherefore I knew they would exist PERFECT for the chowder… I was stoked!
Now, lets talk about the counterfeit of traditional chowder, IT is typically half and uncomplete or heavy cream, leading it to personify VERY rich yet not kindhearted to our bodies. Luckily with the help of cashews and cauliflower… yes cauliflower! We were able to create a decadent and CREAMY base. AHHH, I won't stop organism so excited about the winner of this.
Chancy insisted on adding loads of vegetables to get in more hearty and pick. I was soh proud on his assertiveness connected adding the veggies.

INGREDIENTS

3 1/2 cups organic vegetable lineage
2 cups golden potatoes, cubed
1 cup yellow onion, diced
1 cup celery, cubed

3 tbsp nutritional yeast
1 cup unsweetened almond milk
1 tsp salt (Bicameral)
1/2 tsp pepper (divided)

- In a medium size bowl, set out raw cashews and stream over calefactory water, wholly blanket the cashews & coif aside for 30 proceedings to let surcharge.
